A brewery in Kensington emailed in July asking for a quote on a 316L stainless bin for their glycol loop. Their chiller supplier had recommended it. It would have been a $2,400 sale on a slow month, and instead we spent an hour building a spreadsheet that talked them into spending $140.
This is that spreadsheet, generalised, because the same question arrives about once a fortnight and the answer is almost always the same.
What a glycol reservoir actually does
It holds propylene glycol solution at ambient temperature. It tops up a closed loop and receives a drain-down when the loop is serviced. It never touches product. It never sees steam, caustic or peracetic acid. It sits in a corner of the cellar and is ignored for months at a time.
Written out like that, the specification question answers itself. Every property that makes stainless expensive — temperature tolerance, CIP validation, aroma neutrality, pressure rating, chemical resistance to aggressive chemistries — is irrelevant to the duty. You would be buying a set of capabilities and then not using any of them.

The used poly option wins on cost by a factor of five against stainless, and it wins on embodied carbon by rather more than that. The only column where stainless leads is residual value, and a brewery is not in the business of speculating on 316L.
The one detail that does matter
The gasket. Propylene glycol is fine against EPDM, but glycol loops frequently carry corrosion inhibitor packages, and some of those are not. We specify Viton for glycol duty as standard. It costs eleven dollars more than EPDM and it is the difference between a reservoir that sits quietly for a decade and one that weeps onto a cellar floor in year three.
Where stainless genuinely wins at a brewery
We are not anti-stainless. We sell reconditioned 304 and 316L bins and they are superb. But they belong where their properties are used:
- Hot wort transfer — polyethylene softens and creeps at wort temperatures.
- Neutral spirit and high-proof distillate — ethanol above roughly 20% ABV slowly swells and crazes poly, and imparts a plastic note long before it fails.
- Botanicals, hop extracts and flavour essences — aromatics ghost into a poly wall and reappear in the next product.
- Anything that must be steamed or CIP-validated between products.
- Any duty where the container will run forty fills a year for twenty-five years, because then the embodied carbon per fill is the lowest of anything we sell.
What the brewery did
Bought two washed Grade B totes with Viton gaskets, one for the glycol loop and one for caustic storage, for less than a tenth of the stainless quote. Then spent part of the difference on a reconditioned 304 bin for wort transfer, which is where it belonged in the first place.
They also now sell us their empties. We lost a $2,400 sale and gained a customer who trusts the next quote we send, which on any honest accounting is the better outcome. It is also, we would gently point out, a fifth of a tonne of CO₂e that did not need to be smelted.
